Butternut Squash Bisque
(Healthy Eating Recipe)

Ingredients
1 tablespoon unsalted butter
½ teaspoon shallots, chopped
¼ cup celery, chopped
¼ cup onion, chopped
1 garlic, cloves chopped
2 cups chicken stock (low sodium)
1/8 teaspoon ground cinnamon, more for garnish
1/8 teaspoon ground nutmeg
½ bay leaf
¼ tablespoon fresh thyme
1 pound butternut squash, peeled and diced
¼ cup heavy cream, optional
non fat yogurt or sour cream, as needed for garnish
fresh chives, as needed for garnish
Special Equipment: an immersion blender, or blender & Saucepan
- In a large sauce pan, melt butter.
- Sauté shallot, celery, onion, garlic, and thyme.
- Add butternut squash, chicken stock, cinnamon, nutmeg, and bay leaf.
- Bring to a boil simmer, until soft, about 40 minutes.
- Puree with blender & strain and return to pot. Add heavy cream, if using and mix until incorporated.
- Garnish with cinnamon yogurt, and chives
